Rabbit Food

Also known as Granola. One of my favorite do-it-yourself recipes, and, conveniently, one of the easiest! I can’t get enough of this stuff, and I put it on everything: oatmeal, yogurt, ice cream, cereal. If I’m feeling crazy, I’ll just eat it in one spoon, and spoon gobs of peanut butter in my mouth with another. It’s easy to store, easy to share, and doesn’t spoil too quickly. Read below for my recipe:

Homemade Granola

Ingredients

6 cups rolled oats

2 cups chopped/slivered almonds

1 cup chopped walnuts

1 1/2 cup unsweetened shredded coconut

1/2 cup canola oil

1/2 cup sugar free maple syrup

1/4 cup honey

1/3 cup dark brown sugar

3 tbsp cinnamon

1/2 cup of raisins or chocolate chips

Directions

Preheat your oven to 250°. Combine oats, almonds, walnuts, coconut, sugar, cinnamon in a large bowl. Mix to ensure an even distribution of the ingredients. In a different bowl, combine canola oil, maple syrup,  and honey. Add the syrup mixture to the dry mixture. Spread out on 2 or 3 baking sheets and bake for 1 hour and 20 minutes, stirring every 20 minutes for even color. Remove from oven – when cooled, add in raisins (if adding chocolate, wait until COMPLETELY COOLED to avoid a huge sticky mess)
