If you haven’t noticed, I’m pretty partial to seafood, and tend to cook a lot with shrimp, tilapia, salmon etc. On Sunday, my mom mentioned that she wanted something different, so different is what I gave her! Here is my recipe for Red Pepper and Gorgonzola-stuffed Turkey Burgers!
1 1/4 lb. lean ground turkey meat
1/2 cup chopped onion
1/4 cup low fat Gorgonzola cheese
1 roasted red pepper, diced
2 tbsp panko bread crumbs
1 clove of garlic, chopped
Pepper and salt to taste
Grilled Onion, Arugula, Tomato slices
Mix chopped onion, roasted red pepper, bread crumbs, cheese,garlic , salt and pepper in a large bowl. Mix onion mixture with turkey meat, and form into 6-8 patties. Grill turkey burgers until cooked through, about 4-7 minutes per side.
These turkey burgers were a crowd pleasing dish, and a healthier option for a cookout or football-watching party! Enjoy 🙂
*Note: Roasted red peppers can be bought jarred in most grocery stores, or you can make your own! I followed this recipe from Ina Garten, but eliminated the olive oil and it was still very juicy!
